Christmas Pudding.

2 oz plain flour
4 oz breadcrumbs
4 oz suet.
rind & juice of lemon
4 oz sugar
½ teasp. spice
" nutmeg
" cinnamon
1 teacup milk or 2 tabspns rum or brandy & rest milk.
8-10 oz mixed currants, raisins & sultanas.
2 oz chopped almonds
1 small chopped apple
1 dess. sp. syrup or treacle
1 or 2 eggs (beaten)

Mix well & put in 7" ware dish.
Put greaseproof paper then cloth over top and tie on tightly.
Steam for 4-6 hours then for 2-3 hours on Christmas Day.


Christmas Cake.

12 oz. currants
10 oz. sultanas
4 oz seedless raisins
2 oz chopped almonds
2 oz glazé cherries.
4 oz mixed peel.
4 eggs.
2 tblesp. sherry, rum or milk.
10 oz plain flour
¼ teaspn salt
" mixed spice
" cinnamon
" nutmeg.
8 oz butter or marg
6 oz caster sugar.

1. Line tin with greaseproof paper.
2. Put on oven at 350° or reg. 3.
3. Cream fat and sugar
4. Seive dry ingredients.
5. Add beaten eggs to fat mixture, then fold in dry ingredients, then mix in fruit and lastly sherry.
6. Put in middle of oven for 1 hour, then reduce heat to 300° or Reg 1 for further 2¾ hours.


Chocolate Biscuits.

4 oz plain flour
3 oz cornflour
1 oz drinking choc.
4 oz caster sugar
1 teasp. baking powder
4 oz butter
1 (or 2) beaten eggs

1. Seive together dry ingredients.
2. Lightly rub in butter.
3. Make into soft dough with egg.
4. Roll out thinly on floured board. Cut.
5. Bake on greased baking tray at 375° or reg 4-5 for about 10-12 mintues.
6. Cool and ice.


Victoria Sandwich.

6 oz flour
1½ teasp. baking powder
6 oz castor sugar
6 oz marg.
3 eggs.
flavouring.

1. Bake at 375° for about 25 minutes in two sandwich tins.


Spiced Fruit Cake.

5 oz marg.
10 oz s.r. flour.
2 or 3 eggs.
rind & juice of orange.
warm water.
5 oz castor sugar
½ teasp. mixed spice
1 - 1½ mixed dried fruit
Almond essence.

1. Cream fat & sugar, mix in eggs.
2. Fold in flour & spice & add fruit.
3. Add almond, orange juice & water.
4. Bake at 300 for 3 hours.


Rock Cakes.

8 oz s.r. flour
2 oz marg.
2 oz. suet.
4 oz brown sugar.
2 oz currants
1 oz chopped peel.
Pinch salt
½ teasp. nutmeg.
1 egg.
little milk.

1. Sift dry ingredients, rub in marg.
2. Add suet, sugar, currants, peel.
3. Mix well & add egg & milk.
4. Bake for 15-20 mins at 450


Salad Dressing.

1 tblsp. salad oil
" vinegar
½ teasp. mixed herbs
salt
pepper.

Mix and toss.


Chicken Pie.

Boiling fowl
Onion
Carrot
Celery
3 tblsp butter
4 " flour
4 cups chicken stock
seasoning.

1. Cook fowl with veg. until tender
2. Joint & place in pie dish
3. Melt butter, stir in flour, stock, season.
4. Pour sauce over chicken & leave till cool.
5. Cover with 8 oz flaky or puff pastry.
6. Bake at 450 or reg 7 for 15 mins then at 350 or reg 4 for 30 mins.


Chicken Salad. (for 12)

2 oz butter
6 oz washed, unskinned, finely sliced mushrooms.
2 oz finely grated Parmesan
2 tblspns finely chopped fresh chives.
2 oz flour
¾ pint milk
¼ pint dry white wine
3 ½ lb roasting chicken
butter (2oz)
salt & pepper

1. Rub chicken with butter, sprinkle with salt & pepper & cover loosely with foil.
2. Bake for 50-55 mins at 400 (mark 6)
3. Cool, skin & dice flesh.
4. Dissolve butter, stir in flour.
5. Remove from heat, gradually add milk.
6. Heat until thickened, add wine over low flame, add cheese then mushrooms, season well, remove from heat.
7. Fold in chicken & half chives.
8. Cool, pile on shallow dish, add chives & lettuce.


Chocolate Raisin Crispies.

2 oz marg.
2 oz sugar
1 tblsp. fresh milk
1 tblsp cocoa
3 tblsps dried milk
4 " raisins
4 " cornflakes.

Melt first three and add to others.


Bashed Biscuit Cake.

½ lb bashed digestive biscuits
2 oz butter
2 tblsps syrup
" " cocoa
Ice with chocolate.


Coq-au-Vin.

Chicken
Mushrooms
Onions
Stuffing
Bottle Burgundy
Pishori Rice
Bay leaves
Garlic
Oregano
Root Ginger

1. Set oven medium.
2. Dice onions, 1-2 cloves garlic, small piece root ginger.
3. Fry these in butter until brown
4. Baste stuffed chicken in hot onion etc. fat for 3-5 mins to seal.
5. Place in casserole.
6. Boil ½ - ¾ bottle Burgundy in onion pan (not too much)
7. Add to casserole with bay leaves, etc.
8. Casserole for 2-3 hrs. in medium oven. (the slower & longer the better)
9. ½ hr before eating add chopped mushrooms (c ½ lb)


Beef in Beer.

As above using good meat or fillet and one bottle beer.
Add beer cold.


Beef Stroganoff.

2 lbs good beef cubed.
Onions
Mushrooms.
Garlic
Small tin tomato purée
Cream (pref. sour)
Rice

1. Boil rice.
2. Fry onions, garlic in butter
3. Add meat & mushrooms & mix.
4. Add 1-2 tblspns purée & mix.
5. Add 2-3 tblspns cream quickly
6. Add rice & mix quickly & serve immediately.


George Washington's Cake.

2 cups butter
3 cups sugar
4 eggs separated
4 cups flour sifted.
2 dessertspoons baking powder.
1 cup seedless raisins
⅓ cup currants.
1 teaspn mace
1 " cinnamon.
1 " salt
1 cup milk
¼ cup finely chopped citron.

1. Cream butter & sugar.
2. Add egg yolks
3. Sift dry ingredients & add alternately with milk & beat well.
4. Stir in fruits
5. Beat egg whites stiff but not dry. Fold in.
6. Bake in 2 layers (8") at 350° for 1 hour.
7. Ice between & on top.


Gingerbread.

1 cup butter
½ cup brown sugar
½ cup treacle
½ cup golden syrup
¼ cup cooking sherry
3 cups plain flour sifted with 1 teaspn cream of tartar.
1 teaspn bicarbonate soda (dissolved in 2 tablespns warm water.
1 cup sultanas.
½ cup warm milk
2 tablespns powdered ginger
1 ½ teaspns mace
1 ½ " nutmeg.
3 eggs well beaten
juice & rind of 1 large orange

1. Cream butter, add sugar, beat well.
2. Add syrups, milk, spices, sherry. Mix.
3. Mix cream of tartar & flour & add alternately with beaten egg to butter / sugar mixture.
4. Add orange juice & rind, dissolved soda & raisins.
5. Bake at 350° for 45-50 mins in 12 x 9 x 3 in greased pans.


Guggy Cake

Warm together in a saucepan a teacup each of:
sugar
sultanas
currants
water
+ 4 oz Trex & 2 teasps. mixed spice.
Leave to cool
Stir in 2 cups S.R. flour.
Bake in 1lb loaf tin at Reg 4. (350°)


Fruit Crumble
4-6 oz sugar
1lb fruit

½ lb flour
4-6 oz butter
3-4 oz sugar

1. Prepare fruit & put it into greased pie-dish in layers with sugar.
2. Rub butter into flour.
3. Add sugar and continue to rub until mixture forms small lumps.
4. Press down over fruit.
5. Bake at 375° for 15 mins and at 350° for 30 mins.


Bread and Butter Pudding.

2-3 thin slices B & B
1 oz currants
Nutmeg
1 egg, ½ pint milk, ½ oz sugar.

1. Put B & B and currants into greased pie dish.
2. Mix egg, sugar & vanilla, heat milk to blood heat and pour over egg, stirring well.
3. Strain custard over B & B.
4. Grate nutmeg over top.
5. Leave 30 mins.
6. Bake at 325° for 20 mins.


Dumplings

4 oz SR. flour
¼ level tsp. salt
4 tablespns suet
cold water 6 tablespns


Sauce Piquante.

Put together into pan:
¾ oz butter
½ oz flour
1 onion
2 tomatoes
few mushroom peelings
1 tsp. vinegar
1 tsp. parsley
1 tsp. tomatoe purée
bouquet garni
½ pint stock
salt, pepper
pinch sugar.

simmer 30 mins.


Bitkis.

¼ pint cold water
2 thick slices bread
small onion
1 lb mince
1 tbsp. parsley
seasoned flour
dripping
sauce piquante.

Cook at 360° (Reg 4) for 1 hr.


Bavarian Apple Strudel.

Pastry: 6 oz flour
4 oz butter
2 tblsp. castor sugar
3 tblsp. milk

Filling: 1 lb cooking apples
2 oz sultanas
2 tblsp. sugar
½ mixed spice
2 tbsp. breadcrumbs.

1. Brush with milk
2. Bake at 400° F (Reg 6) for 30 mins.


Scotch Eggs.

4 hard-boiled eggs
1 raw egg
12 oz sausagemeat.
Browned breadcrumbs
Cook about 10 mins in deep fat.


Egg & Sausage Roll.

Pastry: 8 oz flour
4 oz butter
1 egg

Filling: 4 hard-boiled eggs
8 oz sausagemeat.
pinch mixed herbs.
2 tomatoes.
1 small apple.
1 lemon
1 egg to brush pastry.
Bake for 30 mins at 400° F. (mark 6)


Bacon & Egg Pie.

Pastry: 1 egg
3 oz butter.
6 oz flour

Filling: 6 rashers bacon.
4 eggs
1 egg to brush pastry
Bake on 7 " plate for 35 mins at 400° F (mark 6)


Toad-in-the-Hole

Batter: 4 oz flour
2 eggs
½ pint milk

Beat for 5 mins
Stand for 1-2 hrs
Beat 10 mins.

Filling: 1 lb sausages
1-2 oz cooking fat.

Bake at 425° F (Reg. 7) for 40 mins.


Quiche Lorraine

8 inch short crust flan case
2 eggs
4 oz grated cheese
salt & pepper
pinch paprika
½ pint single cream or milk
1 tablespoonful butter
2 tablespoonful finely chopped onion.
4 rashers diced bacon.

Beat the eggs with cheese, seasoning & cream. Melt butter, lightly fry onion and bacon and add to egg mixture. Mix, pour into flan case, bake in a hot oven (425°) for 25-30 minutes, until filling is set and golden.


Chinese Ham and Pea Omelette.

8oz shelled peas (or 1 large pkt frozen)
4 oz shredded lean ham.
1 tablespoonful oil
salt & pepper
4 eggs
1 tablespoonful soy sauce
1 tablespoonful chopped chives

Boil peas quickly in salted water for 3-4 mins and drain. Quick fry ham in lightly greased pan. Whisk eggs with soy sauce, salt, pepper and chives. Allow ham to cool, then add to the eggs with the peas. Whisk together, then fry in a hot oiled pan. Do not overcook.


Peas Pudding

Put yellow split peas in basin with water and pinch bicarb and soak overnight. Drain water, put in hanky, tie top and put in water with tails hanging out. Simmer for at least two hours.


Bread Pudding.

Soak bread in water, crumble, squeeze out water, put in basin with sultanas and currants, ½ tsp. mixed spice, 2 tablespoons sugar, perhaps an egg. Grease square tin & put in mixture and 1" thick. Bake in moderate oven for about 1 hours, then sprinkle with sugar. Eat hot with custard.


Christine's Christmas Cake.

12 oz raisins
" " sultanas
" " currants
2 " mixed peel
4 " glacé cherries (halved)
3 " blanched almonds (chopped)
1 lemon rind & juice.
9 oz plain flour
½ level tsp. salt.
1 level tsp. mixed spice.
8 oz butter
8 oz soft brown sugar
4 eggs (beaten)
1 ½ level tblesp. black treacle.
2 tbsp. brandy.
Bake at 325° for 1 hr then 300° for 2 hrs.


Date Square

8 oz dried dates, chopped
7 fl. oz water

Cook gently 5-10 mins till soft,

pinch cinnamon
1 tsp lemon zest

then add and leave to cool

4 oz wholewheat flour
4 oz " semolina
4 oz "butter"
6 tsp cold water

Mix, rub in, add, roll into two matching squares, fill, press edges together
Cook 20-25 mins at 375°.


Glazed Apple & Apricot Slice

5 oz dried apricots, chopped
10 fl oz water

Cook gently for 5-10 mins,

2 Cox's eating apples, sliced

add & cook 10 mins
Mix together with fork

6 oz wholemeal flour
1 tsp baking powder
3½ oz "butter"
5-6 tsps milk

Mix and roll into a rectangle (8" x 12"), put on baking tray (greased)

Spread the cooked fruit over the pastry leaving 2" margin.

Brush with beaten egg, sprinkle with flaked almonds, cook at 425° for 25 mins.


Carrot Cake

3 oz Dried dates, chopped
2½ fl. oz water

4 oz "butter"
2 eggs

Cook gently about 10 mins and blend with eggs & butter

5 oz wholewheat SR flour
4 oz finely grated carrot
1 oz ground almonds
1 tbsp milk
grated rind large orange
½ tsp ground ginger,
cinnamon & mixed spice

Fold into above mixture, place in oiled and lined 7 " cake tin

Bake 50-60 mins at 350°


Banana Bread

6 oz ripe bananas
2 medium eggs
3 drops vanilla essence

Blend together till smooth and creamy.

4 oz butter
1 tbsp honey

Gently melt together in a pan; when tepid stir in ↑

5 oz wholewheat flour
1 oz desiccated coconut
2 level tsp. baking powder

Combine in bowl, gradually fold in wet ingredients.

Pour into oiled and lined 8 " square sandwich in. Core & slice 1 eating apple and arrange slices on top of mixture.
Cook 25-30 mins at 350°
Dissolve 1 tbsp honey in 1 tbsp hot water and brush over freshly baked cake.
Leave to cool 10 mins before turning out.


Bean Shoot and Mushroom Salad

8 oz bean shoots, washed and drained
12 oz button mushrooms, washed and quartered
1 red pepper, seeded and diced
chopped fresh parsley to garnish.
Dressing 4 tbsp olive oil, 1 tbsp cider vinegar
1 clove garlic, crushed
1 tsp soy sauce, salt & pepper


Red Cabbage Salad

2 dessert apples, peeled, cored, thinly sliced
1 lb red cabbage, finely shredded
1 bunch watercress, washed and sprigged
2 tbsp sultanas
Dressing As above + ½ tsp French mustard


Brown Rice Salad

8oz brown rice, cooked for 1 hr, rinsed and drained
3 spring onions
2 oz currants, soaked 1 hr
2 oz peanuts, chopped
1 small red & 1 small green pepper, seeded & chopped.
4 tbsp French dressing, salt & pepper.


Celery, Apple & Walnut Salad

3 red skinned dessert apples, cored & finely sliced
1 head celery, finely sliced
2 oz walnuts, coarsely chopped
Dressing 3 tbsp olive oil
1 tbsp cider vinegar
pinch dry Eng. mustard
salt & pepper.


Spicy Lentil Soup

2 tbsp oil
2 onions, chopped
2 cloves garlic, crushed.
8 oz red lentils
1 ¾ pints water
1 bay leaf
½ tsp. ground ginger
" " " turmeric
2 " curry powder
salt, pepper, lemon juice.
Simmer gently for 45 mins.


Leek and Potato Soup

2 tbsp oil
1 lb leeks, cleaned & sliced
1 small onion, peeled & sliced
2 medium potatoes " " "
1 clove garlic, crushed
1 pt chicken stock
salt & pepper
Simmer for 30 mins, puree in blender, serve garnished with chopped chives


Red Cabbage with Hazelnuts

1½ lb red cabbage, shredded - blanch 3 mins, then drain
2 tbsp oil
1 onion sliced
2 oz hazelnuts, chopped
4 dessert apples, finely sliced
2 tbsp clear honey
4 tbsp cider vinegar
2 tbsp lemon juice
¼ pt stock, seasoning

Cook onions & hazelnuts 5 mins, in hot oil. Stir in other ingredients, cover and cook over low heat for 20 mins.


Green & Red Pepper Quiche

8oz wholemeal pastry
2 tbsp oil
1 onion, chopped
1 red & 1 green pepper, seeded & sliced
2 eggs
¼ pt. milk
2 oz fresh wholemeal breadcrumbs
2 oz cheese, grated
seasoning
Line 8 " flan tin with pastry
Fry onion & peppers for about 10 mins
Beat eggs with milk then add onions and all other ingredients
Pour into flan case and bake for 40 mins at 375°


Potatoes and Tomato Pie

1 oz butter
1 oz wholemeal flour
½ pt milk
4 oz cheese, grated

Make into sauce, using 2 oz cheese.

1 lb potatoes
2 onions, sliced
1 lb tomatoes, skinned and sliced
salt, pepper, pinch dried basil.

Cook potatoes and slice thinly. Grease a shallow, ovenproof dish and arrange the potatoes in layers with the onions, tomatoes and cheese sauce, seasoning with salt, pepper and basil between each layer.
Finish with layer of potato, sprinkle with remaining cheese.
Bake at 350° for 45 mins.


Mushroom & Nut Pilaf

4 tbsp olive oil
8 oz brown rice
1 onion sliced
1 clove garlic crushed
2 stocks celery, chopped
1 red pepper & 1 green pepper chopped
4 oz cashew nuts, chopped
6 oz button mushrooms, quartered
salt & pepper.

Fry rice for 2-3 mins in 2 tbsp oil, cover with boiling water and cook for 45 mins, then drain well.
Heat remaining oil in large pan, fry onions then other ingredients. Cook for 5-7 mins. Add cooked rice and seasoning and simmer gently till heated through.


Swedish Meatballs

1 large onion, finely chopped
1 clove garlic
1 lb minced beef
6 oz fresh wholemeal breadcrumbs
½ tbsp each fresh thyme & parsley
2 tsp soy sauce
salt, pepper

Mix together, divide into balls, fry in oil.

1 egg & 3 tbsp water - beaten together.
Pour ½ pt tomato sauce over meatballs and cook at 350° for 30 mins.
Spoon ¼ pt yoghurt over meatballs and cook for 10 mins more.


Fig loaf

4 oz All Bran
4 oz molasses sugar
4 oz dried figs, chopped
2 tsp molasses

Mix in bowl and allow to stand for 30 mins

½ pt milk
4 oz wholemeal flour
2 tsp baking powder

Add to mixture and mix well.

Cook in 1 lb loaf tin at 350° for 45-50 mins.


Cottage Cheese Loaf (Serves 3)

8 oz cottage cheese
3 oz rolled oats
1 large egg
1 tablespoon soy sauce
1 teaspoon mixed herbs
few drops liquid sweetener

Combine & mix thoroughly. Press into greased casserole
Bake 20-30 mins at 350° . Serve hot or cold.


Old-fashioned Tomato Soup (Serves 10)

2 tblspns oil
4 medium onions, roughly chopped

Fry till onions soft

6 cloves garlic, crushed.
4 lb ripe tomatoes, roughly chopped
3 large carrots, sliced
1 stick celery, sliced
2 bay leaves
3 cups stock
½ tspns marjoram
" " mixed herbs
1 tspn salt.
pepper

Add & simmer for 40-50 mins; cool, puree in blender, reheat.

chopped mint or parsely to garnish.


Cucumber Soup (for 10)

2 med. cucumbers, sliced into 1 "
5 cups stock
3 spring onions, chopped

Simmer for 30 mins, sieve, & discard skins

2 oz butter
1 ½ oz flour

Melt butter, stir in flour, cook 1 min.
Gradually stir in "stock" ↑ & salt, pepper - season generously.

2 fl. oz. cream
2 egg yolks

mix together & stir through the soup.

thin cucumber slices for garnish.


Carrot & Nut Cottage Salad (for 8)

6 med. carrots, coarsely grated
2 oz raw peanuts or walnuts, roughly chopped
1½ oz bean sprouts
3oz sultanas
3 tblspns lemon juice
Combine all ingredients, adding lemon juice just before serving


Banana & Yoghurt Raita (for 6)

20 fl. oz. yoghurt
4 bananas, sliced
pinch chilli powder
1 tblnspn lemon juice
1 tspn garam masala.
¼ tspn ground coriander
½ tspn salt

Mix yoghurt till smooth, combine other ingredients & chill at least 1 hour.

Chopped fresh coriander for garnish.


Ratatouille

1 eggplant
salt

Cut into ½" slices, sprinkle with salt & leave 30 mins, pat dry.

3 tblspns oil
1 large onion, chopped
2 cloves garlic, crushed

sauté till onion is soft; add other veg. (except tomatoes) & simmer 10 mins

1 green pepper, cut into slices
4 med. courgettes, cut into thick slices

½ tspn oregano or mixed herbs
salt & pepper
3 tomatoes, peeled & chopped.

Add to mixture & simmer 25-30 mins.


Cottage Dressing (substitute for mayonnaise)

8oz cottage cheese
6 fl. oz. sour cream
small clove garlic, crushed
2 tspns vinegar
½ tspn Worcestershire sauce
1 tspn dry mustard
½ tspn salt
½ tspn pepper

Blend until smooth, chill to develop flavour


Yoghurt Dressing

4 fl. oz. yoghurt
2 ½ fl. oz. oil
2 tblspn white vinegar
⅓ cup snipped chives
2 tbspn chopped parsley
1 clove garlic, crushed.
½ tspn prepared mustard.
salt, pepper

Combine in screw-topped jar & shake well. Refrigerate.


Thousand Island Dressing

4 fl. oz. oil
2 tblspn. finely chopped onion.
1 " chopped stuffed olives
1 " " parsley
1 " Worcs. sauce
2 " lemon juice
1 " orange "
½ tspn salt
pinch mustard & paprika

Combine in screw-top jar & shake well.


Vegetarian Lasagne (for 6)

8 oz wholemeal lasagne - Cook 10-15 mins in salted boiling water, cover with cold water.

1 tblspn oil
2 med. onions, chopped
4 cloves garlic, crushed

Sauté till onion is soft

14 oz canned tomatoes, chopped
2 tspn oregano
1 " basil
3 tbspns chopped parsley, salt & pepper

Add & cook 30 mins till thickened

8 oz mushrooms, sliced & sautéed in butter
6 oz cooked red kidney beans

Stir in

16 oz cottage cheese
2½ oz grated Parmesan
8 oz thinly sliced mozzarella

Layer with lasagne, veg. & cook 30 mins at 375°


Pleasure Pie

1 ½ tblspn wheatgerm

Sprinkle onto lightly greased casserole dish.

1 " butter
3 med. onions, quartered

Sauté until golden brown

1 cup skim milk
5 oz cooked brown rice
2 eggs beaten
9½ oz can mixed beans, drained
2 tspns mixed herbs
1 tblspn Worcs. sauce
salt, pepper
4 oz grated Cheddar

Mix into onion mixture but using only ½ the cheese; sprinkle top with remaining cheese.

Bake 30 mins at 375°, serve hot or cold with salad.


Cabbage & Nut Loaf

2 tblspns oil
2 large onions, chopped
2 cloves garlic, crushed

Sauté till onion softens.

12 oz shredded cabbage

Add & cook another 5 mins.

8oz chopped walnuts
2 oz fresh wholemeal breadcrumbs.
1 tblspns soy sauce
1 tspn nutmeg
4 eggs, lightly beaten
4 fl. oz. milk
salt, pepper

Mix in and press into greased loaf tin

1 oz fresh breadcrumbs
1 tspn mixed herbs
1 tblspn Parmesan

Mix together & sprinkle over loaf.

Bake 30 mins at 350°


Apple Ambrosia (for 6)

4 med. cooking apples
1 oz raisins
1 oz roughly chopped walnuts
9½ oz natural yoghurt
¼ tspn cinnamon

Peel, core & thinly slice apples. Cook very gently in small amount water. Drain; mix all ingredients together; chill & serve sprinkled with extra cinnamon.


Apple Snow

3 tspns gelatine
¼ cup hot water

dissolve & allow to cool

14 oz. unsweetened stewed apples
2 fl. oz. lemon juice
1 tspn cinnamon
½ tspn liquid artificial sweetener

sieve & mix with other ingredients

whites of 3 large eggs - beat until stiff peaks form, fold into apple mixture & refrigerate till set


Apple Crumble

6 cooking apples, peeled & thinly sliced
4 fl oz water.
2 tblspns sultanas
½ tspn mixed spice.

Simmer until tender.

Crumble topping
1½ tblspns SR. flour.
3 " coconut
1 weetabix crushed
½ tspn vanilla essence
" " liquid sweetener
⅔ oz marge

Mix together & rub in butter
Sprinkle over topping & bake 20 mins at 350°.


Hobbit Log

4 oz dried apricots, chopped
2½ oz sultanas
" raisins, chopped
1½ oz prunes, "
2½ oz dates, "
4 fl oz boiling water

Pour boiling water over fruit & stand for 10 mins.

2 oz chopped peanuts
2 tspns lemon juice
1½ oz coconut
2½ sunflower seeds
1½ skim milk powder

Add & mix well.
Form into 2" diameter log

2½ oz coconut - roll round log
Wrap in foil & refrigerate.


Strawberry & Apple Spread

1 lb fresh strawberries
12 oz unsweetened pie apple.
2 tblspns lemon juice
" " orange "

Simmer for 30 mins, stirring frequently.

5 fl oz hot water
1½ tblspns diabetic strawberry jelly crystals
liquid artifical sweetener

Stir together till dissolved
Stir into mixture.


Apricot Jam

4 oz dried apricots
8 fl oz. orange juice
4 oz dried apples
24 fl. oz. water
1 tblspn. lemon juice
3 tspns diabetic lemon jelly crystals
2½ fl. oz. boiling water
artificial sweetener

Soak apricots in orange juice, & apples in water overnight. Next day, combine the apricots, apples, remaining liquid & lemon juice & simmer uncovered for 1½ hours.
Mash the fruit to a pulp.
Add the boiling water to jelly crystals and dissolve. Add to jam, sweeten to taste.


Peanut Soup.

2¼ pts stock
heaped tblspn chopped onion
7oz salted peanuts
8-9 oz whipping cream
salt, pepper, Cayenne pepper

Simmer in covered pan for 20 mins
Strain off most of liquid & blend rest with peanuts till v. smooth. Add to strained stock, then stir in cream + seasonings. Bring slowly to just under the boil.


Shrimp Pilau

¾ lb long grain rice

3 tblspns oil
1 large onion, thinly sliced
3 cloves garlic, " "

Fry together till soft then fry rice

4 black cardamoms, crushed
2 med. tomatoes, sliced
salt & pepper
6 oz raw shrimp
6 oz frozen peas.
1 oz blanched slivered almonds
1 oz raisins, soaked

Add + 3¼ cups stock, bring to boil & cook until rice is soft & water absorbed. Stir in shrimps & peas & cook till soft. Stir in nuts & raisins & place in oven for 10 mins.


Chicken Wings in Black Bean Sauce

1 lb Chicken wings marinade for 1 hour in
1 tblspn light soy sauce +
1 " rice wine

2 tblspn oil
1 " garlic - finely chopped
1 " ginger - " "
1½ " spring onion - " "

Stir fry

1½ " black beans - coarsely chopped - add
Chicken - add & stir till brown
5 fl oz chicken stock - add & simmer uncovered for 15 mins.


Prawn Foo Yong

8 oz prawns
1 tspn cornflour
1 egg white

Mix and leave in fridge for 20 mins.

2 large eggs
1 tspn sesame oil
3 tblspn chicken stock
2 tspn rice wine
½ tspn salt & sugar
2 tspn light soy sauce

beat together.

Cook prawns in 1 tblspn oil till pink & firm - remove.
Add 1 more tblspn oil
Add eggs & swirl round
Add prawns & toss to mix.


Stir Fry Ginger Broccoli

1 lb broccoli - cut to 1-2" pieces, cook for a few mins then plunge in cold water.
2 tblspn oil

1 inch finely shredded ginger
½ tspn salt

fry

Add broccoli & toss
Add ½ tspn sesame oil.


Pot Sticker Dumplings

1 oz finely chopped chinese leaves
3 oz minced pork
1 tblspn water
1 " rice wine
1 " dark soy sauce
1 " spring onions - finely chopped
1 tspn ginger
½ " salt
½ " sugar
½ " sesame oil

Mix

5 oz plain flour
4 fl oz v. hot water

Mix & knead for 8 mins, rest for 30 mins, knead 2 mins, roll into cylinder 9" x 1", cut into ½ " segments, roll out, fill & fold [NOTE: drawing of required shape here].
Brown in pan with 1 tblspn oil
Add 2½ fl oz. water when brown.
Cover tightly & cook for 10-12 mins.


Game (or Turkey) Pie

1lb cooked Game
1 oz butter
1 small onion, chopped.
8oz button mushroons, sliced
2 tbsp. chopped parsley
1 tbsp flour
6 fl oz gravy or stock.
Salt & Pepper
2 hard-boiled eggs.
4 rashers streaky bacon.

Cook onion in butter (low heat, 10 mins)
Add mushrooms & fry, then add parsley & flour. Stir in stock & cook till boils. Season. Put into pie dish, top with puff pastry, glaze with beaten egg. Cook 425 for 30 mins, then 375 for 10 mins.


Ratatouille

3 Aubergines
Salt & pepper
2 tbsp oil
2 lg onions, chopped
4 tomatoes, peeled, chopped
6 medium courgettes, cut in strips.
1 lge green, red, yellow peppers, strips
ground coriander
2 sprigs fresh thyme
3 tblsp chopped parsley

Cut aubergines into fingers, place in colander, sprinkle with salt & set aside for 30 mins. Rinse, drain & dry.
Fry aubergines lightly in oil & set aside. Repeat with each veg separately. Layer & season in casserole sprinkling in thyme. Cover & bake at 375 for 30-35 mins.
Serve hot or cold or with melted cheese on top.


Stuffed Lemon Sole with White Wine Sauce

8 Lemon Sole fillets
2 oz Philadelphia cream cheese
7 oz tin tuna / salmon (drained)
4 tbsp double cream (1 for stuffing)
salt & pepper
¼ pt white wine
2 oz butter
1 oz flour
½ pt milk
2 egg yolks
2 tbsp lemon juice
parsley

Put stuffing ingredients in liquidiser & blend till smooth. Put spoonful on each fillet, roll up & place in ovenproof dish. Pour in ½ wine, cover with buttered paper & bake in moderate oven for 20 mins. Transfer to serving dish & keep hot. Make sauce with butter, flour & milk, stir in all wine & simmer for 2 mins. Remove from heat, whisk in egg yolks, lemon & remaining cream. Stir over low heat (do not boil) until thick.


Potato Stuffing (for Goose)

3 oz butter, softened
2 lge onions, finely chopped
1lb potatoes
1 large cooking apple, peeled, cored & sliced
6 rindless rashers streaky bacon, diced
3 tbsp double cream
salt & pepper

Cook onions in butter (slowly c 20 mins)
Boil pots for 10 mins, add apple & cook until tender. Drain thoroughly & mash.
Dry fry bacon till crisp then beat into pots with cream & onions.
Season.
Pour ¼ pt port over goose, 15 mins before end of cooking time, to crisp)


Breakfast Muffins

5 oz self-raising flour
4 oz wholemeal "
4 oz muesli or nuts
4 oz soft brown sugar
3 tsp baking powder
¼ tsp salt
1 egg, beaten
½ pt milk
2 fl oz oil
3 oz raisins

Mix dry ingredients and liquids separately. Gradually mix together then fold in raisins.
Spoon into 12-15 muffin tins & bake at 400 for 20-25 mins.


B & B Pudding

2 oz butter, 10 slices bread
10 oz sultanas, 2 bananas
6 eggs 6 oz sugar 6 tbsp rum
2 pts milk - chill for 1 hr
350° for 45-60 mins.


Mincemeat Pancakes

4 oz plain flour
1 egg
¾ pt milk
1 tsp sugar
1 tbsp melted butter

Make batter & leave for 1 hr

Makes 10 pancakes

Stack pancakes with layers of greaseproof in between (may be frozen)
Top with 3 tbspns chopped almonds, lightly toasted.

Topping

Whisk 4 egg yolks with 4 oz sugar & 3 tbsp brandy / sherry / rum till thick & frothy (over warm water). Spoon over pancakes & place under hot grill till golden brown & bubbling
Cut into wedges & serve.


Chocolate Mousse

12 oz Plain Choc.
5 oz Butter
7 egg yolks & whites
4 tbsp brandy, rum, or Grand Marnier.

Melt choc. with butter in bowl over hot water. Beat in egg yolks one at a time, stir in brandy. Whisk egg whites till stiff, fold into choc. mix. Pour into glasses, cover with cling filk & chill till next day.


Brown Bread Ice Cream

3 oz brown breadcrumbs
2 oz dem sugar
4 eggs separated
½ pt double cream
2 oz caster sugar.

Mix breadcrumbs & d. sugar; grill till brown & crunchy; cool. Lightly beat egg yolks. Whisk double cream till thick; whisk whites to soft peaks & whisk in c. sugar till glossy. Fold all together & freeze.


Sinful Choc. Cake

8 oz butter
8 oz caster sugar
6 eggs separated
8 oz plain choc., melted
5 oz ground almonds 5 oz plain flour.

Beat butter & sugar together; add egg yolks & beat. Slowly add melted choc & mix. Fold in almonds & flour.
Whisk egg whites till stiff; fold into cake mixture. Pour into well-greased 9" cake tin & bake at 350° for 60-70 mins
(decorate with whipped cream.


Vinaigrette Dressing

⅓ vinegar to sunflower oil, add 1 tsp. honey, ½ tsp. Dijon mustard, salt, pepper, 1 tbsp. finely chopped herbs.


Red Cabbage +

1 small red cabbage
lge handful stoned prunes
2 apples, peeled & chopped
scant tblsp. brown sugar
6 fl oz cider vinegar.

Shred cabbage & cook (covered) with rest of ingredients over low heat, stirring from time to time for about 40 mins (can be reheated)


Pineapple, Pepper & Cottage Cheese Salad

Mix pineapple chunks with
8 oz cottage cheese
2 oz salted cashew nuts
2 sticks finely chopped celery
1 green pepper, finely chopped.
Chill & serve on bed of lettuce.


Three Fish Kedgeree

4 oz butter
1 lb rice (cooked)
1 tspn curry powder
6 oz peeled cooked prawns

4 oz cooked smoked haddock
8 oz cooked cod.

Flaked

4 hard boiled eggs quartered
½ pint cream (s- or d-)
2 tbsp. chopped chives
Heat butter, stir in rice & curry powder. Stir in fishes. Stir in eggs, cream & chives. Season.


Turkey Hash

4 tbsp oil
2 lge onions thinly sliced
1½ lb cooked turkey, in strips
4 stalks celery " "
1 green, 1 yellow, 1 red pepper " "

Fry

½ pt soured cream - stir in + seasoning
1 medium beetroot in strips - stir in & serve.


Turkey lasagne

2 lb cooked chopped turkey
1 red pepper in fine strips
4 oz blanched almonds, toasted.
6 oz lasagne verdi
4 oz mozzarella cheese (thinly sliced)

Sauce

3 oz butter
1 ½ flour
1 pt milk

¼ pt single cream
½ tsp mustard powder
4 oz grated Cheddar.

Stir in after making sauce

Layer all ingredients & sauce, ending with cheese slices. Bake at 350 for 45 mins.


Egg Brunch

6-8 eggs

1 lge tomato
2 or three mushrooms
2 spring onions

Chop & cook lightly

Grated cheese - melt, then add eggs, then veg.


Bread & Cheese Brunch

½ oz butter
8 slices bread, crusts removed,
1lb Cheddar cheese, grated
1 pt milk
3 eggs
1 tsp. rubbed sage

Line base of buttered dish wish ½ bread, sprinkle ½ cheese on top. Repeat.
Beat milk, eggs, seasoning together, pour over bread & cheese & leave in fridge for few hours or overnight
Bake in moderate oven (350) for 1 hr.


Banana Bread

4 oz butter
8 oz soft brown sugar

beat

1 egg

add & beat

2 ripe bananas, mashed

add

8 oz plain flour
1 tsp salt
1½ tsp baking powder

sift & add ½ alternating with 4 tbsp yoghurt

Grease 1lb loaf tin & bake at 350 for 1 hour.


Potato & Nut Roast

1 med. onion - chopped
4 celery sticks - chopped finely
2 tblspns oil

Fry lightly

1 x 8oz tin tomatoes, drained & chopped
4 oz mushrooms - finely chopped

Add, fry till "dry"

8 oz mixed nuts - " "
6 oz potatoes, cooked & sieved
salt, pepper, Worcs. sauce
½ tspn each basil, coriander
2 egg yolks

Put into well oiled loaf tin & cook at 400° for about 1 hour.


Quick Potato Soup

2 lb Potatoes, peeled, grated
2 large onions, grated
4 oz Butter

Fry

3 pt stock
Salt & Pepper

Add, boil 15 mins

½ pt Milk - Add, heat

8oz Grated Cheese - Sprinkle.


Potato & Onion Tart

Pastry

6 oz wholemeal flour
2 oz lard
2 oz marge
3 oz potatoes, mashed

Combine, without water.

Filling

1 large onion, sliced
6 oz potatoes, diced & cooked

Cook 5 mins, cool.

2 oz butter
2 eggs, beaten
¼ pt milk
½ tspn mixed herbs
3 oz cheese

Add

Bake at 375° for 40 mins.


Wholemeal Biscuits for Cheese.

2 oz marge
2 oz lard
8 oz Wholemeal Flour

Rub in

1 level tspn salt
1 oz caster sugar

Stir in

3 oz Potatoes, cooked & sieved

Kneed in.

Roll pastry out ½" thick
Cut into 2½" Circles.
Bake 20 mins at 400°


Potato Chahkee

2 med onions, sliced
2 tblspns oil

Fry till brown

1 tblsp curry powder
salt & pepper

Stir in

1 lb potatoes, diced - Add, cook 5 mins
½ pt hot water
2 oz raisins

Add, cook 10 mins more

2 oz raisins
12 oz tomatoes, quartered - Add, cook c 5 mins


Potato Scones

4 oz Plain flour
salt
1 lb Potatoes, cooked & sieved.
Kneed well.

Roll out thinly, prick with fork, cut into triangles.

Cook quickly on lightly greased heavy pan.


Lipari Pizza

Base

2 oz butter
4 oz SR flour

rub in

¼ tspn salt
8 oz potatoes, sieved - stir in

Kneed lightly, shape into 10" round.

Topping

1 tblspn oil
8 oz onions, sliced
1 red pepper, thinly sliced
1 clove garlic, crushed

Fry 2-3 mins

1 tblspn tomato puree - spread over base.
4 oz mushrooms, sliced
pinch oregano, salt, pepper
2 tspn malt vinegar

Add to mixture, spread over tomato.

6 oz Cheddar cheese, grated - sprinkle

Cook for 25-30 mins at 450°


Cottage Cheese & Tomato Quiche

Pastry

6 oz Plain flour
1½ oz Marge
1½ oz lard
3 oz Potatoes, cooked & sieved

Blend (without water)

Filling

8 oz tomatoes, thinly sliced
4 oz peeled, cooked, sliced

½ tomatoes in 8" flan + potatoes; other ½ toms, to top

8 oz cottage cheese
1 tspn chives, chopped
1 tspn onion, finely chopped
½ tspn made mustard
1 tbspn parsley, chopped
4 eggs beaten
salt & pepper

50 mins at 375°

Blend and pour over.


Cornish Potato Cake

1lb Potatoes, cooked & sieved
½ tspn salt
2 oz lard, softened
1 oz soft marge
4 oz plain flour
3 oz onions

Mix together & spread over baking sheet 13" x 9"
Bake 30-40 mins at 425°
