1 Tabl.Spoon Treacle
1 Teas. Spoon B. Soda

1 " " M. Spice
½ lb Raisins
½ pt Milk

Rub Marg into Flour
Add dry ingredients
lastly treacle & fruit
then milk

Rub Marg into Flour & Sugar

Melt in pan 3 ozs Marg

Mix Fat with Flour & Sugar

Add 1 Egg with little milk

1 " Cocoa
2 " Cocoanut

Melt marg, sugar, syrup. Slowly Add Cocoa, Do not boil
Fold in cocoanut and Flakes


Coffee Buns

8 ozs S.R. Flour
4 " Marg
2 " S. Brown Sugar
2 " Demarara
½ teap Coffee Essence
2 ozs Currants
Small Egg

Rub Marg into Flour
Make a well in centre
Add sugar, Egg & coffee Essence
Roll into small ball

1 " Porage Oats

Cherries to Decorate

Cream Fat & Sugar
Beat in Egg
Work in Flour
Porage Oats
Drop Vanilla Essence

Yogurt Loaf

1 Carton Yogurt (orange)
3 Cartons S.R. Flour
2 Cartons Caster Sugar
¾ Carton Cook Oil
2 Eggs Well Beaten
Pinch Salt

Mix All Ingredients Together
Put into 2 2lb Loaf tins
Bake for 1 hour Nº 3 Gas
Line Tins


Dumpling

2 lbs S.R. Flour
1 lb B. Sugar
1 tablesp Syrup
2 ozs Shredded Suet
2 " C. Fat
½ Teasp B. Powder
½ lb Currants
½ lb Raisins
2 Teasp. Cinnamon
2 " Mixed Spice
½ " G. Ginger
Pinch Salt

Mix Flour. Rub in Fat
Add dry ingredients

Mix with water not too Soft
Sprinkle Flour on tea cloth
tie up not too tight
Boil for 3 hours
Put plate in bottom of pot


Beef Curry

2 ozs Butter
2 Onions
2 tablesp Curry Powder
2 " Flour
1 pt Stock
Salt & Pepper
12 ozs cooked beef
8 " " Veg.

Melt Butter, Fry Onions till brown.
Add Curry
Add Flour cook 1 min
Add Stock, stirring constantly
cook for 30 mins
Add meat & Veg.
Rice
Boil 2 Cups salted water
Pour in 1 Cup Rice bring to boil
Do not stir
Cover and simmer for 5 mins
Strain with boiling Water


Boston Creams

Boil 3 bottles Water

Add 2 lbs Sugar
2 ozs Tartaric Acid
Small bottle lemon juice
White of Egg


Souffle

½ lb Sugar
1 Lemon Table Jelly
Juice & Rind 2 Lemons
2 Eggs
½ pt Double Cream

Put sugar, Rind, Juice & Yolks into Saucepan. Stir till it boils. Melt Jelly in ½ pt water
Add to mixture & Sieve into Bowl
When cool add whites egg Beaten
Whip cream with a little Sugar
Fold Cream into mixture
When cold decorate with choc


Sultana Cake

12 ozs S.R. Flour
6 " Marg
6 " C. Sugar
12 ozs Sultanas

5 Eggs

Nº 4 1 ½ Hours


Christmas Cake

½ lb Butter
½ lb C. Sugar
7 Eggs
1 ½ lb mixed Fruit
¼ Cherries
¼ ground Almonds
½ lb P. flour
1 teasp. Mixed Spice
1 " Cinnamon
½ " B. Powder
Nº 3 1 hr.
Nº 2 2 hrs
Nº 1 1 hr

Cover with tin foil last hour


Prawn Cocktail

4 ozs Prawns
4 Tablsp. Mayonaise
1 " Tomato Pureé
2 " Thick Cream
1 Teasp. Worcester Sauce


Liquor

2 lbs Damsons
2 lbs Sugar

1 Bottle Gin

Leave in Jar

3 months

Keep stirring
Strain


EMPIRE BISCUITS

4 oz FLOUR
2½ oz. BUTTER OR MARG.
1 oz. CASTOR SUGAR

JELLY, WHITE GLACE ICING
GLACE CHERRIES.

SIEVE FLOUR, RUB IN FAT. ADD SUGAR & KNEAD INTO BALL.

ROLL OUT CUT INTO ROUNDS. SIZE OF WINEGLASS.

PUT IN GREASED BAKING TIN

300F - 1-2 GAS. TILL LIGHTLY COLOURED.

1 HOUR


PINEAPPLE RAISIN LOAF

1 SM TIN CRUSHED PINEAPPLE
2 CUPS RAISINS
1 CUP SUGAR
¼ LB MARG
1 TEASP. BAKING SODA
BOIL - COOL
ADD 1 CUP PLAIN FLOUR
" " S.R. FLOUR
2 EGGS BEATEN

BAKE 350-375 1 HOUR
